Our Cacao’s Journey

Harvesting and Cracking of Cacao Pods

Our single-origin cocoa offers full traceability — a key advantage for craft chocolatiers who demand transparency and quality. Every pod is carefully harvested at peak ripeness, hand-selected for excellence, and transported to processing stations within just 2 to 4 hours of harvest to preserve maximum freshness and flavor.

Precision harvesting and cracking are critical stages in cocoa bean production, directly influencing the flavor, texture, and overall quality of chocolate. Precision matters — from harvest timing to the tools and techniques used.

Our skilled farmers bring deep expertise to every step, carefully managing factors like pod selection and gentle cracking to protect the integrity of the cocoa and ensure exceptional bean quality.

Fermenting

The key to unlocking the rich, complex flavors in cocoa beans is fermentation. It is one of the most critical stages in the chocolate-making process, directly shaping the quality, aroma, and depth of the final product.

At Bechira, we use the artisanal wooden box fermentation method — a traditional, hands-on approach that allows natural yeasts and bacteria to break down tannins, reduce bitterness, and develop nuanced aromas.

It starts when fresh beans, still covered in their sweet pulp, are placed in boxes and covered with banana leaves. In the anaerobic phase, natural yeasts convert sugars into alcohol and acids, softening the pulp and starting flavor development.

Next, oxygen enters, initiating the aerobic phase , where heat and bacteria deepen the cocoa's color and aroma.

Over 5–7 days, the beans evolve from fruity and acidic to rich and chocolatey. This careful, hands-on process sets the foundation for premium chocolate with depth and nuance.

Drying

Drying is a critical step in post-fermentation, directly influencing the final quality, flavor, and shelf life of cocoa beans. According to the International Cocoa Organization, slow and even drying allows fermented beans to complete the necessary chemical reactions that develop the pleasant bitterness and nuanced flavors essential for fine chocolate.

The goal is to reduce the beans' moisture content from around 70% to between 6% - 8%. This typically takes 5 to 10 days, depending on the method and climate conditions.

At Bechira, we prioritize sun-drying, a traditional and eco-friendly practice ideal for farms in South India. Beans are spread on raised surfaces in thin layers and regularly turned to ensure even drying. This method, while weather-dependent, helps preserve the cocoa’s natural aroma, nutrients, and deep flavor profile — without the need for artificial energy inputs. Improper drying — particularly if beans reabsorb moisture can result in higher Free Fatty Acid (FFA) levels, leading to off-flavors.

Sorting and Packaging

Once the cocoa beans are fully dried, they undergo a final inspection to ensure quality and consistency. At Bechira, beans are hand-sorted to remove any broken, under-fermented, or damaged beans, as well as foreign matter. This meticulous process ensures that only the finest, most flavorful beans make it through.

After sorting, the beans are packed in breathable jute bags, which allow for airflow and prevent moisture buildup during storage and transit.
